Tonight’s dinner menu in our house was quesadillas! It was the first time we made Carly some with her dairy-free cheese and SHE LOVED THEM! It makes us so happy when we find something else that all 4 of us can eat together as a family! This was sort of a happy accident … we had leftover tortillas from when we had breakfast for dinner on Saturday night, and a leftover steak from last night’s dinner. I was just trying to improvise with what we had and decided that quesadillas would be fun! They’re a favorite of Bill, Macy, and I … and now Carly can join in the fun, too! YEA!
